- 2 cups Basmati Rice ghee rice / Sona masuri used for
- 4 numbers eggs Boiled
- Garam masala
- 2 tablespoons Ghee
- 4 tablespoons Oil
- 3 numbers Onion - large
- 1 number Tomato - large
- 4 numbers chilly Green -
- 2 teaspoons Coriander leaves
- 1/2 teaspoon Cumin seeds
- 2 tablespoons masala Pulav
- 1.5 tablespoons Chilly powder
- 1/2 teaspoon Turmeric powder
- 1.5 tablespoons Coriander powder
- 1 teaspoon Garam masala powder
- to taste Salt
- as required Cashew nuts
- as required Raisin
- 1 teaspoon Ginger garlic paste
- 4 & half cup Water
- 2 tablespoons Yoghurt
- 1/2 number Lemon
- 1 tablespoon Green peas (optional)
Steps to make to make Egg Pulao
- There are 3 methods to cook this - 1)Pressure Cooker with 2-3 whistles 2)Use of a Thick bottomed vessel,where both rice and masalas are cooked together 3) Cook rice separately and mix with masala. For the best results, use method 2. If you are running out of time, use method 1. I cooked using this method
- To see the list of garam masala used, please check the Ghee rice section under my recipe "Friday Special Egg Biriyani". Try to use most of the garam masalas, mainly the bay leaves,cloves,cardamom,cinnamon,black pepper,black cardamom,star anise,etc. If you have only less of the items, add more of garam masala powder
- Soak rice for 1-2 hours.If you are adding green peas, please soak them too for sometime and add along with rice to the cooking vessel at step 11
- In a thick bottomed pan/cooker, heat oil. Add cumin seeds. Once they pop,add garam masalas. You can also add nuts and raisins at this step or roast them at the end to garnish
- Add finely sliced onions and a pinch of salt and mix well. You will get a very good aroma of the onions and the garam masalas
- Add chopped green chilli,ginger-garlic paste and mix well
- Add chopped tomatoes and mix well. You may add a pinch of sugar
- If you are using a pressure cooker, you need not wait for these to be completely cooked, else close the lid and let the onions get cooked till they turn pink
- Once everything gets cooked and oil is seen separated, add all the powders. If you want it spicier, add additional quantities of red chilly powder or pulav masala. As mentioned earlier, if you are using less of garam masala, add more quantity of the garam masala powder
- When the raw aroma of the masala is done,add yoghurt and mix well
- Add water.When it starts to boil, add the soaked rice and mix well
- Add ghee or oil.Check for salt level and add as required
- If you are using a pressure cooker, close the lid and let it cook for 2-3 whistles. If you are using any other vessel, close the lid and allow it to cook for 10-15 minutes or till the rice gets cooked.In any ways, make sure you do not over cook the rice. Once cooked,you may sometimes find the pulav to be a bit wet, in such cases you can just remove the lid and allow the heat to go
- Squeeze lemon on to the rice and mix well
- Cut the boiled eggs into halves or even further.Add them to the rice.Layer some rice on top of the eggs and close the lid for a while
- Mix the rice.Garnish with fresh chopped coriander and roasted nuts and raisins
- Serve with raitha and side dish of your choice
