- 3-4 french beans chopped, 2 florets/ chopped cauliflower
- 1 π₯ carrot cubes, 1 green capsicum chopped π«
- 1/2 cup fresh peas/ pigeons peas
- 2 potatoes cubesπ₯,fried onions for garnish
- For simple Punjabi salad:
- 2 rings onions π§ , 1 rings π tomato, π₯ cucumber
- 4 whole garlic clovesπ§, 1green chillies chopped
- 1 tbsp chopped coriander leaves/ chopped parsley
- For dressing: 11/2 tbsp white vinegar/ lemon juice π
- Salt to taste π§, 1 tsp sunflower oil π»
- 1/2 tsp black pepper powder
- For Punjabi boondi yoghurt:
- 1/2 cup boondi, 1 cup yoghurt, salt to taste π§
- 1 tsp roasted cumin powder, 1/2 tsp Chaat masala
- 1 tsp mixed herbs, 1tbsp chopped ginger
- 1 tbsp green chillies paste, 1/2tsp black pepper powder
- For Punjabi green chutney:
- 1/2 cup mint leaves, 1/4 cup chopped coriander leaves
- 2 chopped onions π§ small size, salt to taste
- 1 tbsp ginger- garlic paste π§, 1 tbsp green chillies paste
- 1 tsp white vinegar, 1 tsp sugar, 1/2 tsp kashmiri red chillies
- 1/2 tsp cumin powder, 1/2 tsp black salt
- For Punjabi aloo tikki (potato tikki)
- 4-5 boiled potatoes (mashed)
- 1 tbsp ghee melted, 2 tbsp chopped coriander leaves
- 1/2 cup Bengal gram, 1 tsp cumin seeds,2 tbsp oil
- 1 tsp kashmiri red chillies powder
- 1 tsp coriander & cumin powder,salt to taste
- 2 small size chopped onions π§ , 1/2 tsp black pepper powder
- 1/4 tsp cinnamon powder, 1/4 tsp cardamom powder
- 1/4 tsp Chaat masala, 1/2 cup π½ corn flour/ plain flour
- 3 tbsp π rice flour
- For Punjabi paratha:
- 1 cup wheat flour, 3 tbsp dry fenugreek leaves
- Salt to taste π§, 1 tsp cumin seeds
- 2 tbsp chopped coriander leaves, 1/2 tsp turmeric powder
- 1 tsp kashmiri red chillies powder
- 1/2 tsp coriander & cumin powder, 1/2 tsp black pepper powder
- For green peas rice :
- 1 cup basmati rice π, 2 tbsp ghee, 1 bay leaf, 1 star anise
- 2 cinnamon sticks, 3-4 green cardamom, 1 strands mace
- 1 tsp cumin seeds, 1/2 tsp black pepper powder, 3-4 cloves
- 1 cup green peas, salt to tasteπ§
- 1 tbsp ginger-garlic paste π§, 21/2 water,
- 2 medium size π§ onions, 2-3 green chillies chopped
- 1/2 vegetable cube, 1 tbsp chopped coriander leaves,
Steps to make to make Vegetarian Punjabi thali πΆ️π ππ₯π§ π₯π«
- Note: if you like to make Punjabi lentil, it's kindly recommended to check spicy black gram dal/ lentil, for dessert, check πΉ rose vermicelli kheer.
- For mixed vegetables sabzi π₯π π₯π§ : for time saving, boil potatoes, cauliflower, carrots, french beans, peas (don't boil green capsicum and pigeon peas). Heat oil add ghee, oil stir, add cumin seeds when start to crackle, add chopped onions π§ cook until golden, add ginger-garlic paste π§, cook for 1 min, add chopped tomato π , tomato paste and mix, add salt, black pepper powder, kashmiri red chillies powder, coriander & cumin powder, yoghurt mix,cook until oil comes, add pigeon peas if using
- Add all boiled vegetables, potatoes, cauliflower, carrotsπ₯, french beans, peas and mix, cook until oil comes out, serve, garnish with fried onions, chopped coriander leaves.
- For simple Punjabi π₯ salad: cut onions π§ , π tomato, cucumber π₯, green chillies, garlic cloves mix gently in a bowl, keep aside, for dressing : mix white vinegar/ π lemon juice,salt, black pepper powder, sunflower oil π»mix, pour on the salad and serve.
- For Punjabi boondi yoghurt: whisk yogurt until smooth, add roasted cumin powder, Chaat masala, chopped coriander leaves, mixed herbs, ginger chopped, green chillies paste, salt, black pepper powder and mix, soaked boondi mix and serve.π§πΆ️
- For Punjabi aloo tikki: soak Bengal gram, heat oil add cumin seeds, when start to crackle, add chopped onions π§ stir, add soaked Bengal gram mix, add kashmiri red chillies powder, salt, chopped coriander leaves, chopped green chillies and mix, add cinnamon powder, cardamom powder mix, keep aside. in a bowl add mashed boiled potatoes, chopped coriander leaves, oil 1 tbsp, salt and mix, add corn flour/ rice flour and mix, make balls and make a hole in the center with your thumb.
- Add the stuffing and make balls again, flatten the balls slightly, heat 4 tbsp oil and shallow fry them till brown and crisp and serve with Punjabi green chutney.
- For Punjabi paratha:Ina bowl add wheat flour, dry fenugreek leaves, cumin seeds, chopped coriander leaves, salt, turmeric powder, kashmiri red chillies powder πΆ️, coriander & cumin powder, black pepper powder and mix, add water mix, dough is ready, make round paranthas and fry them with ghee/ oil, serve.
- For Punjabi green chutney: add all the ingredients, in blender and blend, remove chutney is ready to serve.
- For green peas rice: soak rice, Heat ghee saute spices, when the spices begin to sizzle, add slices onions π§ & green chillies chopped mix and cook onions until deep golden, add ginger- garlic paste π§, cook for 1 min, then add green peas, finely chopped mint leaves saute for a min.
- Add coriander leaves, add soaked / drained rice and fry on a slightly high flame for 3 mins, add salt, 1/2 vegetable cube and mix, add water give a good mix, let it boil, when half done, cover and cook on slow heat, check when rice is tender, serve.
- Punjabi vegetarian Thali is ready to serve hot. Tip: you can serve cumin π rice with Punjabi thali, the choice is ours.
