  1. For Dry masala-
  2. 1 tsp turmeric powder
  3. 1/2 tsp red chilli powder
  4. 1/2 tsp kashmiri red chilli powder
  5. 1/2 tsp coriander powder
  6. 1/2 tsp biryani masala
  7. Other ingredients-
  8. 2 cups basmati or biryani rice
  9. 2 tbsp curd
  10. 1 medium sized onion(finely sliced and fried)
  11. 1/2 cup onion paste
  12. 1 tbsp ginger paste
  13. 1 tbsp garlic paste
  14. 1 tbsp ghee
  15. 2 tbsp saffron milk
  16. as needed Oil
  17. as needed Salt
  18. 1/2 tsp sugar
  19. 1/4 cup tomato puree
  20. 2 green chillies
  21. For Whole spices
  22. 1-2 bay leaf
  23. 1 black cardamom
  24. 4 green cardamom
  25. 1 small cinnamon stick
  26. 2 cloves
  27. 2-3 dry red chillies
  28. 1/2 tsp jeera

Steps to make to make Paneer biryani

  1. Firstly, heat a pan. Add 2 tsp oil and fry the paneer cubes until golden brown. Now transfer the fried panner cubes into a bowl, add water, pinch of salt and 1/2 tsp turmeric powder. Keep aside for a while.
  2. Now meanwhile, in a bowl add 2 cups rice, water and 2 green cardamoms. Keep on gas stove for boiling. Once the rice is 90% cooked, drain the water and keep aside.
  3. Now heat a pan, add 1-2 tsp oil. Add all the whole spices and saute for few seconds. Now add onion paste and saute for few seconds. Now add ginger paste, garlic paste, turmeric powder, salt, chilli powder (both red chilli powder), coriander powder, biryani masala and mix well. Saute for few minutes until masala is cooked and raw flavour is gone. Now add tomato puree and saute for few minutes on low to medium flame. Add curd, mix well. Now add the panner cubes (after draining the turmeric water).
  4. Now add 1/2 cup water, add sugar and keep on low to medium flame. Occasionally stir until consistency become dry. Switch off the flame and keep aside.
  5. Take a deep bottomed vessel (or a vessel whose bottom is not too thin). On a low flame, place the vessel. Add 1 tsp oil. Add first layer of rice(refer pic 2). Now add 1/2 portion of paneer curry/preparation and then cover with another layer of rice (as mention in pic3 and pic4). Add 1/2 tbsp ghee, 1 tbsp saffron milk, 1/2 portion of fried onions. Now add another layer of paneer (as pic5), add green chillies
  6. . Cover with another layer of rice, add ghee, saffron milk and fried onions (as in pic6).
  7. Cover the lid and keep on low flame (keep on dum) for 10 minutes and switch off the flame. Keep covered for another 5 minutes. Biryani is ready. Serve with raita and salad
